Filter Coffee (Pour-over technique)

Pourover method:

Pour Over is an accessible and delicious way to make coffee at home. We love this brew method for the clarity, sweetness and nuanced flavour it produces. While there is a range of variables to explore in pour over brewing, this is our favourite recipe to suit a variety of coffee.

You will need:

  • A pour over brewer. We recommend the v60 or origami brewer.

  • Conical filter paper.

  • 20g coffee ground for filter.

  • Scales, timer and a carafe or cup for serving.

  • A kettle a few minutes from boiling, around 95°C. A gooseneck kettle makes pour overs even easier, but isn’t essential.

Let’s get brewing!

Step One:

Place the brewer on your server or cup and put in the filter paper. Rinse the filter paper with hot water. Discard this water.

Step Two:

Pour your ground coffee into the cone and shake/tap gently to evenly distribute the grounds.

Step Three:

Place the brewer and server on your scale and tare. Start your timer and pour 60g of water in a circular motion slowly and evenly around the coffee bed.

Step Four:

Give the cone a swirl or stir a few times to evenly saturate the coffee.

Step Five:

At 40 seconds, fill to 180g water in the same circular motion.

Step Six:

At 1 min 20 seconds, fill to 300g in circular motions.

Step Seven:

Wait for the water to finish dripping, this should be around 3 minutes.
